李廣杏 李(li)廣(guang)(guang)杏(xing)(xing)(xing)可稱敦煌(huang)水果(guo)(guo)之王,每年七月是(shi)李(li)廣(guang)(guang)杏(xing)(xing)(xing)的收獲(huo)季(ji)節。李(li)廣(guang)(guang)杏(xing)(xing)(xing)因其(qi)光澤(ze)黃亮、汁甜(tian)(tian)如蜜而享有盛名(ming)。關于李(li)廣(guang)(guang)杏(xing)(xing)(xing)的來(lai)歷(li),還有一段美麗的傳(chuan)說,相傳(chuan)西(xi)漢年間,飛將(jiang)軍李(li)廣(guang)(guang)率部西(xi)征,夏日炎炎,將(jiang)士(shi)焦渴難忍。突(tu)然空中襲(xi)來(lai)一陣(zhen)奇香(xiang),只見兩匹(pi)彩(cai)綢自流云中飄下。李(li)將(jiang)軍策馬(ma)追舌(she),拔出神(shen)箭射(she)(she)出,其(qi)中一匹(pi)彩(cai)綢應聲落地(di),變成一片(pian)果(guo)(guo)實累(lei)累(lei)的杏(xing)(xing)(xing)林(lin)。眾人爭(zheng)食,苦似黃蓮。李(li)廣(guang)(guang)憤然砍平杏(xing)(xing)(xing)林(lin),次日渭晨,卻見杏(xing)(xing)(xing)林(lin)又枝(zhi)(zhi)繁(fan)葉(xie)連,鮮(xian)嫩欲滴的黃杏(xing)(xing)(xing)令人饞涎欲滴。李(li)廠忍不住摘下一個咬(yao)了(le)(le)(le)一口,頓(dun)時香(xiang)人肺腑(fu),將(jiang)土們紛(fen)紛(fen)摘杏(xing)(xing)(xing)食之,頓(dun)覺精神(shen)倍(bei)增。原來(lai),那兩匹(pi)彩(cai)綢本是(shi)甜(tian)(tian)杏(xing)(xing)(xing)仙(xian)子和苦杏(xing)(xing)(xing)仙(xian)子,奉王母之命來(lai)救(jiu)李(li)廣(guang)(guang)的,她們只顧(gu)嬉戲(xi),惹怒李(li)廣(guang)(guang)而射(she)(she)落了(le)(le)(le)苦杏(xing)(xing)(xing)仙(xian)子,深夜(ye)甜(tian)(tian)杏(xing)(xing)(xing)仙(xian)子找攏到了(le)(le)(le)苦杏(xing)(xing)(xing)仙(xian)子,施展仙(xian)法,在苦杏(xing)(xing)(xing)樹樁上接上甜(tian)(tian)杏(xing)(xing)(xing)樹枝(zhi)(zhi),最后結(jie)出了(le)(le)(le)清香(xiang)甘甜(tian)(tian)的黃杏(xing)(xing)(xing)。當年曾為李(li)廣(guang)(guang)解危救(jiu)困的甜(tian)(tian)杏(xing)(xing)(xing),隨(sui)著李(li)廣(guang)(guang)大(da)軍傳(chuan)人敦煌(huang),所以(yi)敦煌(huang)人把它叫作(zuo)李(li)廣(guang)(guang)杏(xing)(xing)(xing)。
鳴山大棗 鳴(ming)山(shan)大(da)棗(zao)(zao)以個大(da)味甘營養(yang)豐富著稱(cheng)。每顆鮮(xian)(xian)棗(zao)(zao)重量(liang)可達45克,成熟后外表光亮紅中(zhong)透(tou)黑。宛若紅寶石,它含有豐富的蛋白質(zhi),脂(zhi)肪(fang),維生(sheng)素以及鈣、磷(lin)、鐵等(deng)營養(yang)物質(zhi),藥用(yong)價值(zhi)極高,是(shi)補血(xue)、益氣、養(yang)腎(shen)、安神之(zhi)佳品。大(da)棗(zao)(zao)宜(yi)制干(gan)棗(zao)(zao)和酒棗(zao)(zao)。敦煌酒棗(zao)(zao)風味獨(du)持,制法是(shi)秋后挑選(xuan)個大(da)飽滿的鮮(xian)(xian)棗(zao)(zao), 用(yong)酒攪(jiao)拌,封存于瓦壇中(zhong),到冬春(chun)啟封,鮮(xian)(xian)活如初(chu)。棗(zao)(zao)香伴著酒香,確能使人饞涎頓(dun)溢,熏(xun)(xun)熏(xun)(xun)欲醉。
陽關葡萄 古(gu)陽(yang)關(guan)下盛產(chan)葡(pu)萄(tao),主要品種(zhong)有(you)無(wu)核白珍珠、白水晶、馬奶子(zi),喀什(shen)紅、玫瑰(gui)香(xiang)(xiang)等(deng),近年來又引進了紅堤、黑堤等(deng)名優新品種(zhong)。因陽(yang)關(guan)周圍屬沙漠型氣候,光照時間長(chang),晝夜溫(wen)差大,長(chang)出的(de)葡(pu)萄(tao)皮(pi)薄(bo),色(se)鮮,清香(xiang)(xiang)多汁,酸甜可(ke)口,品質優良。陽(yang)關(guan)葡(pu)萄(tao)既可(ke)鮮食,又可(ke)風(feng)干,還可(ke)釀酒(jiu)。如今,古(gu)陽(yang)關(guan)下的(de)南湖鄉已成(cheng)為葡(pu)萄(tao)生產(chan)基地,新建的(de)1000米葡(pu)萄(tao)長(chang)廊,內設(she)石凳、石桌(zhuo),游(you)人步人葡(pu)萄(tao)長(chang)廊,一邊觀(guan)賞,一邊品嘗,悠然自礙,不亦樂乎(hu)!
敦煌瓜 到敦(dun)煌不吃敦(dun)煌瓜(gua)(gua)(gua),可(ke)是(shi)一大遺憾。古(gu)時敦(dun)煌一帶盛產美瓜(gua)(gua)(gua),故有“瓜(gua)(gua)(gua)州”之稱,史書(shu)記載:“敦(dun)煌古(gu)瓜(gua)(gua)(gua)州,出(chu)美瓜(gua)(gua)(gua)。狐人其(qi)中,不露首尾。”敦(dun)煌瓜(gua)(gua)(gua)水分足,含糖量極高,是(shi)消暑(shu)解渴的佳(jia)品,敦(dun)幄瓜(gua)(gua)(gua)品種較(jiao)多(duo),主(zhu)要有炮(pao)彈(dan)瓜(gua)(gua)(gua)、嘗蜜(mi)(mi)紅,克克齊(qi)、黃河蜜(mi)(mi)、金皇后、香(xiang)瓜(gua)(gua)(gua)、白蘭瓜(gua)(gua)(gua)等,其(qi)中以新品種的黃河蜜(mi)(mi)為最,其(qi)瓜(gua)(gua)(gua)圓形,個不大,皮色(se)黃亮似金,瓜(gua)(gua)(gua)瓤碧翠如(ru)玉,色(se)澤極為誘人。瓜(gua)(gua)(gua)味甘甜,咬(yao)一口蜜(mi)(mi)汁沾唇,香(xiang)氣撲鼻,且有輕淡(dan)香(xiang)醇的酒味。
香水梨 隆冬季節來(lai)到敦(dun)(dun)煌(huang)你(ni)就會看(kan)到一種(zhong)(zhong)冰凍如(ru)石(shi)、黑褐晶(jing)亮的水(shui)(shui)(shui)果(guo)(guo)。將它浸人涼水(shui)(shui)(shui)之中,約一刻鐘(zhong)后,果(guo)(guo)品表面(mian)蛻出一層薄(bo)薄(bo)的冰殼,剝去(qu)冰殼,去(qu)皮吮(shun)食(shi)(shi),酸甜(tian)適宜,余香沁(qin)人心(xin)脾。這就是敦(dun)(dun)煌(huang)特有的消(xiao)冰香水(shui)(shui)(shui)梨。香水(shui)(shui)(shui)梨俗稱軟(ruan)兒(er)梨,是敦(dun)(dun)煌(huang)傳(chuan)統的水(shui)(shui)(shui)果(guo)(guo)品種(zhong)(zhong),栽培(pei)歷史悠久(jiu),果(guo)(guo)品色澤質(zhi)地俱佳,鮮(xian)食(shi)(shi)美味可(ke)口,儲藏(zang)簡便易行。香水(shui)(shui)(shui)梨營養豐富,含(han)有檸檬酸、蘋(pin)果(guo)(guo)酸、葡萄糖(tang)、果(guo)(guo)糖(tang)以(yi)及多(duo)種(zhong)(zhong)維(wei)生素,食(shi)(shi)之可(ke)以(yi)解煩去(qu)燥,潤肺(fei)生津,是價廉(lian)物美、食(shi)(shi)療兼(jian)備的妙品。
驢肉黃面,中華名小吃(chi),制作過程中的拉面最顯(xian)示真功夫(fu)。
漿(jiang)水(shui)面先(xian)要制作(zuo)漿(jiang)水(shui),把芹菜或箭(jian)桿白菜、蓮花萊投入面湯,加上漿(jiang)水(shui)酵(jiao)子,盛入缸內(nei)放在溫暖處發(fa)酵(jiao)三天,即可制成清酸可口的漿(jiang)水(shui)。
風干饃,敦煌夏(xia)季炎熱(re),許多新鮮(xian)食(shi)品不易(yi)存放,像風干饃(mo)、葡萄干、杏(xing)干、瓜(gua)干等,饅頭掰開曬干起來(lai)快。
鎖陽,敦煌(huang)的(de)野生鎖(suo)陽最(zui)佳(jia)采收期最(zui)好是下過一場雪后(hou)的(de)三九時節。
